Stuffed Green Peppers

  1. Grease a 2-quart baking dish.
  2. Rinse peppers; cut a thin slice from the stem end of each pepper and remove inner white fiber and seeds.
  3. Rinse cavity.
  4. Drop peppers into boiling salted water. Cover and simmer for 5 minutes; remove and set aside to drain. Brown ground beef in oil.
  5. Stir in parsley, salt, pepper and cooked rice.
  6. Lightly fill pepper shells with mixture, heaping slightly. Place on baking dish.
  7. Combine tomatoes, onions, salt, water and pepper; mix well.
  8. Pour over peppers.
  9. Place strips of cheese on top of each pepper.
  10. Bake at 350u0b0 for 30 minutes.
