Stuffed Green Peppers
- 4 large peppers
- 1 lb. ground beef
- 1/4 c. vegetable oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. minced parsley
- 2/3 c. cooked rice
- 1 1/2 c. tomatoes, sieved
- 1/4 c. minced onions
- 1/2 tsp. salt
- 1/4 c. water
- 1/4 tsp. pepper
- 2 sticks Mozzarella cheese
- Grease a 2-quart baking dish.
- Rinse peppers; cut a thin slice from the stem end of each pepper and remove inner white fiber and seeds.
- Rinse cavity.
- Drop peppers into boiling salted water. Cover and simmer for 5 minutes; remove and set aside to drain. Brown ground beef in oil.
- Stir in parsley, salt, pepper and cooked rice.
- Lightly fill pepper shells with mixture, heaping slightly. Place on baking dish.
- Combine tomatoes, onions, salt, water and pepper; mix well.
- Pour over peppers.
- Place strips of cheese on top of each pepper.
- Bake at 350u0b0 for 30 minutes.
