Red Pepper Relish
- 2 large tomatoes, cut into eighths
- 2 stalks celery, cut into 1-inch pieces
- 3 red peppers, seeded and cut into eighths
- 1 onion, quartered
- 1 tablespoon salt
- 2 tablespoons sugar
- 1/8 teaspoon allspice
- 1/8 teaspoon cinnamon
- 1/8 teaspoon cloves
- 1/4 cup red wine vinegar
- Assemble and attach KitchenAid(R) Fruit/Vegetable Strainer attachment to the KitchenAid(R) Stand Mixer. Turn to Speed 4 and strain tomatoes into a large glass bowl.
- Assemble and attach KitchenAid(R) Food Grinder attachment to the KitchenAid(R) Stand Mixer. Use the coarse grinding plate, turn to Speed 4 and grind celery, peppers and onion into glass bowl.
- Add salt, sugar, allspice, cinnamon, cloves and vinegar; mix well.
- Cover and refrigerate, stirring occasionally, at least 8 hours before serving.
