Country Supper Soup
- 3 c. diced, cooked chicken or turkey
- 1 onion, chopped
- 1 garlic clove, crushed
- 3 Tbsp. butter
- 3 c. water
- 1 can tomatoes
- 1 can tomato sauce
- 1 can kidney beans
- 3 carrots, sliced
- 3 stalks celery, sliced
- 3 Tbsp. rice
- 2 chicken bouillon cubes
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 bay leaf
- 1/2 tsp. poultry seasoning
- 1/2 small head cabbage, chopped
- In a heavy 2-quart saucepan, heat chicken, onion and garlic in butter until onion is transparent.
- Add remaining ingredients and mix well.
- Cover and bring to a boil.
- Reduce heat and simmer 30 minutes.
- Remove bay leaf before serving.
- Serves 6 to 8.
