Fettuccine Supreme(Only 267 Calories Per Serving)
- 1/2 c. part-skim Ricotta cheese
- 1/4 c. skim milk
- 1 Tbsp. plus 1 tsp. margarine
- 3 oz. thinly sliced Prosciutto (Italian style ham), diced
- 1 garlic glove, minced
- 1 c. cooked chopped broccoli
- 2 c. cooked fettuccine
- 1 oz. grated Parmesan cheese
- dash of white pepper
- 2 Tbsp. chopped fresh parsley, garnish
- In blender container combine Ricotta cheese and milk and process until smooth; set aside.
- In 9-inch skillet heat margarine until bubbly and hot; add Prosciutto and garlic and saute until garlic is golden, about 1 minute.
- Add broccoli and cheese mixture and cook over medium heat until sauce begins to bubble.
- Reduce heat and add remaining ingredients except parsley.
- Cook, stirring and tossing gently until fettuccine is thoroughly coated with sauce.
- Serve sprinkled with parsley.
- Makes 4 servings.
