Veal Patties
- 4 green onions
- 1/4 c. fresh basil leaves
- 1 egg white, beaten
- 1/2 lb. ground veal
- 1/3 c. fine bread crumbs
- 3/4 c. evaporated skim milk
- 1/2 tsp. nutmeg
- 1/4 tsp. allspice
- 1/4 tsp. pepper
- 1 Tbsp. olive oil
- 1 Tbsp. flour
- 1 c. low-fat chicken stock
- Chop onions.
- Mince basil.
- Add green onions and half of basil to beaten egg whites.
- Stir in veal, bread crumbs and 1/4 cup milk.
- Add nutmeg, allspice and pepper.
- Make patties.
- Brown in olive oil.
- Remove to plate and keep warm.
- Combine 1/2 cup milk and flour; blend.
- In skillet, add chicken stock and bring to a boil, stirring browned bits from bottom of pan.
- Stir in flour mixture; cook 2 minutes.
- Stir in remaining basil.
- Return patties to skillet.
- Cook two minutes until hot.
- Good with brown rice and green vegetable.
