Veal Patties

  1. Chop onions.
  2. Mince basil.
  3. Add green onions and half of basil to beaten egg whites.
  4. Stir in veal, bread crumbs and 1/4 cup milk.
  5. Add nutmeg, allspice and pepper.
  6. Make patties.
  7. Brown in olive oil.
  8. Remove to plate and keep warm.
  9. Combine 1/2 cup milk and flour; blend.
  10. In skillet, add chicken stock and bring to a boil, stirring browned bits from bottom of pan.
  11. Stir in flour mixture; cook 2 minutes.
  12. Stir in remaining basil.
  13. Return patties to skillet.
  14. Cook two minutes until hot.
  15. Good with brown rice and green vegetable.
