Very Veggie Vegetable Soup

  1. Warm oil in a large saucepan over medium heat. Add onion and bell peppers. Cook 5 minutes or until tender. Add garlic and cumin. Cook 1 minute. Add cabbage, carrots, zucchini, squash, tomatoes (with juice), vegetable juice, black pepper and red pepper flakes. Heat to boiling. Reduce heat to low, cover and simmer 1 hour. This soup is so good and has only 170 calories per serving.
