Grilled Soy-Glazed Pork Chops

  1. Make a fire in a charcoal grill (about 375u0b0F to 400u0b0F) or preheat a gas grill to medium. Season both sides of the chops evenly with salt and pepper. Let rest at room temperature for 20 minutes.
  2. In a small bowl or measuring cup, mix together the soy sauce, vinegar, lime juice, brown sugar, and sriracha, if using. Place the chops directly over the coals and cook, covered, for 3 minutes. Turn and brush with the soy mixture, cover, and cook an additional 3 minutes. Continue to turn the chops and brush with the soy mixture every 3 minutes until cooked through, about 18 to 21 minutes total, or until chops reach an internal temperature of 150u0b0F (closest to the bone). Remove from heat, brush once more, and let rest 10 minutes before serving.
