Mexican Casserole(Microwave)
- 5 flour tortillas
- 1 lb. ground beef or turkey
- 1/2 c. chopped green pepper
- 1/2 c. chopped onion
- 1 (1 1/4 oz.) envelope taco seasoning mix
- 1 (8 oz.) can tomato sauce
- 2 c. broken corn chips
- 1 (6 oz.) can tomato paste
- 1/2 c. sliced ripe olives
- 1/4 c. hot water
- 1/2 tsp. chili powder
- 1 c. sour cream
- 2 eggs
- 2 c. shredded Monterey Jack cheese
- In a large pan, cook the beef, green pepper and onion.
- Drain fat.
- Add taco seasoning, tomato sauce and paste, olives, water and chili powder.
- Microwave at High until thickened, about 8 minutes.
- Blend sour cream and eggs in a small bowl.
