Caribbean Pork With Mango Salsa
- 1 fresh mango, peeled and diced
- 1/2 cup finely chopped poblano chile pepper
- 2 tablespoons frozen orange juice concentrate, thawed
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon grated fresh ginger
- 1/2 teaspoon sugar
- 1/2 teaspoon ground allspice
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 4 (4-ounce) boneless center-cut pork loin chops (1/2 inch thick)
- Cooking spray
- Combine first 6 ingredients in a medium bowl, and toss well. Cover and chill.
- Combine allspice, pepper, and salt in a small bowl; mix well. Sprinkle evenly on one side of pork. Place a large nonstick skillet over medium-high heat until hot. Lightly coat pork with cooking spray. Cook pork, seasoned side down, 6 minutes or until lightly browned. Turn pork, and cook 6 to 7 additional minutes or until done. Serve with mango salsa.
