Lemon-Cranberry Tuna Salad Sandwiches
- 1/3 cup fat-free mayonnaise
- 1/4 cup low-fat sour cream
- 1/4 cup sweetened dried cranberries, coarsely chopped
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon grated lemon rind
- 1 teaspoon fresh lemon juice
- 1 (12-ounce) can solid white tuna in water, drained
- 8 basil leaves
- 4 (2-ounce) kaiser rolls, sliced in half horizontally
- 1 small cucumber, sliced
- 8 Bibb lettuce leaves
- Combine first 7 ingredients in a medium bowl; stir in tuna.
- Place 2 basil leaves on bottom halves of each roll; top basil leaves evenly with tuna mixture. Top each sandwich with cucumber slices, 2 lettuce leaves, and tops of rolls.
