Sundance Eggs
- 4 flour tortillas
- 8 eggs
- 2 tsp. water
- 1/4 tsp. salt
- 1 Tbsp. butter
- 1/2 c. chopped green onion
- sour cream for garnish
- 2 medium tomatoes, peeled and chopped
- 1 (4 oz.) can chopped green chilies, drained
- 1 c. shredded Monterey Jack cheese
- 4 Tbsp. taco sauce
- Preheat oven to 350u0b0.
- Wrap tortillas in foil; bake about 5 minutes until warm.
- Combine eggs, water and salt in a medium bowl; beat well.
- In a large skillet melt butter; add eggs and scramble until set.
- Remove from heat; place warm tortillas on a large, ungreased cookie sheet.
- Top each tortilla with 1/4 of eggs, onion, tomatoes, chilies and cheese.
- Bake for 5 to 10 minutes until cheese is melted.
- Top each with 1 tablespoon taco sauce and sour cream.
- Makes 4 servings.
