Beef And Bean Casserole

  1. Preheat oven to 350u0b0.
  2. In a large skillet, brown meat, 1/2 chopped onion and 1 clove garlic over medium-high heat, stirring often to break up lumps of meat.
  3. Stir in refried beans.
  4. Transfer mixture to a medium bowl and set aside.
  5. In a large skillet, heat 2 tablespoons oil over medium heat.
  6. Add remaining onion and cook, stirring often, until softened, about 3 minutes.
  7. Add remaining garlic jalapeno pepper, chili powder and cumin.
  8. Cook, stirring, 30 seconds.
  9. Stir in tomato sauce and Ro-Tel tomatoes.
  10. Bring to a boil.
  11. Reduce heat to low and simmer partially covered, until sauce is slightly thickened, about 20 minutes.
  12. Stir 1/2 cup sauce into meat-bean mixture.
