Mr. Martone'S Pasta Sauce
- 1 (6 1/2 lb.) can peeled tomatoes
- 1 (12 oz.) can tomato paste
- parsley
- salt
- pepper
- 1 1/2 lb. sweet sausage
- 1 1/2 lb. ground round
- 3 cloves garlic
- garlic salt
- 1/4 c. bread crumbs
- olive oil
- 1 large egg
- Romano cheese
- Process the can of tomatoes and strain through a ricer into a 6-quart saucepan.
- Add tomato paste, 1 tablespoon salt, pepper and parsley.
- Cook at medium heat.
- Put olive oil in skillet; be sure to cover the bottom.
- Saute garlic and cut sausage into links and brown.
- Place sausage into the sauce.
- Put the ground round into a bowl.
- Add egg, bread crumbs, parsley, salt, pepper and garlic salt to taste.
- Also, grate Romano cheese to taste.
- Form ground round into meatballs and brown.
- After browning, add meatballs to the sauce.
- Strain a small amount of pan drippings into the sauce. Cook for about 3 hours.
