Seafood Gumbo

  1. Heat oil in heavy skillet and add flour.
  2. Stir constantly until dark brown, being careful not to burn.
  3. Reduce heat and add onion and celery.
  4. Saute until soft.
  5. Gradually add 2 to 3 quarts of water and seasonings; stir until smooth.
  6. Simmer until onion and celery are well done.
  7. Add shrimp, crab meat and green onion and cook over low heat until shrimp are tender.
  8. Add oysters just before serving and heat until oysters curl.
  9. Serve over rice.
  10. If okra is used, saute with onions and celery.
