Seafood Gumbo
- 1/2 c. cooking oil or bacon drippings
- 1/2 c. flour
- 1 onion, chopped
- 2 ribs celery, chopped
- 2 to 3 qt. boiling water
- salt and pepper to taste
- 1 tsp. liquid crab and shrimp boil
- 1 to 1 1/2 lb. peeled shrimp
- 1 lb. crab meat
- 1/3 to 1/2 c. green onions, chopped
- 1 pt. oysters
- 1/2 lb. okra, chopped (optional)
- Heat oil in heavy skillet and add flour.
- Stir constantly until dark brown, being careful not to burn.
- Reduce heat and add onion and celery.
- Saute until soft.
- Gradually add 2 to 3 quarts of water and seasonings; stir until smooth.
- Simmer until onion and celery are well done.
- Add shrimp, crab meat and green onion and cook over low heat until shrimp are tender.
- Add oysters just before serving and heat until oysters curl.
- Serve over rice.
- If okra is used, saute with onions and celery.
