Black Walnut Pie
- 1/4 cup plus 2 tablespoons butter or margarine, softened
- 3/4 cup sugar
- 1/2 cup firmly packed brown sugar
- 4 eggs
- 1/2 cup whipping cream
- 1/4 cup light corn syrup
- 1/4 teaspoon salt
- 3/4 cup chopped black walnuts
- 1 teaspoon vanilla extract
- 1 unbaked (9-inch) pastry shell
- Whipped cream (optional)
- syrup, and salt, beating well. Place over rapidly boiling water and cook, stirring constantly, 5 minutes or until mixture thickens. Stir in walnuts and vanilla. Cream butter in top of a double boiler; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Add whipping cream, syrup, and salt, beating well.
- Place over rapidly boiling water and cook, stirring constantly, 5 minutes or until mixture thickens. Stir in walnuts and vanilla.
- Pour filling into pastry shell. Bake at 350u0b0 for 45 minutes or until set. Cool and serve with whipped cream, if desired.
- Note: 3/4 cup chopped hickory nuts may be substituted for chopped walnuts.
