Kathryn Palmer'S Maple Bars
- 3/4 cup sugar
- 1/2 cup vegetable shortening
- 1 cup maple syrup
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups regular oats
- 1 cup all-purpose flour
- 1/4 cup flaked sweetened coconut
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Vegetable cooking spray
- Cream sugar and shortening at medium speed of a mixer until light and fluffy (about 5 minutes). Add syrup, vanilla, and eggs; beat until well-blended. Combine oats and next 4 ingredients; stir well. Add to creamed mixture, stirring just until dry ingredients are moistened.
- Pour batter into a 13 x 9-inch baking pan coated with cooking spray. Bake at 350u0b0 for 40 minutes or until a wooden pick inserted in center comes out clean.
