Roasted Cod With Mustard Bread Crumbs
- 4 5-oz. cod fillets, thawed if frozen
- 1/2 teaspoon dried thyme
- Salt and pepper
- 2 tablespoons olive oil
- 1 tablespoon white vinegar
- 2 teaspoons sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon dry mustard
- 1 cup panko
- Preheat oven to 375u0b0F. Line a baking sheet with heavy-duty foil and mist with cooking spray. Place fish on prepared sheet. Sprinkle with thyme. Season with salt and pepper.
- In a small bowl, whisk together 1 Tbsp. olive oil, vinegar, sugar, Dijon mustard and dry mustard. Spread evenly over fish. Combine panko with remaining oil until evenly moistened. Press panko onto fish. Bake until fish is cooked through, 10 to 12 minutes.
- Preheat broiler. Place fish on a rack about 5 inches from heat source; broil until crumbs are golden brown, 30 seconds to 1 minute, watching carefully to avoid burning. Serve immediately.
