Kibbe Sandwiches
- 2/3 cup boiling water
- 1/2 cup bulgur (cracked wheat), uncooked
- 5 ounces lean ground lamb
- 3 tablespoons chopped fresh parsley
- 3 tablespoons finely chopped onion
- 2 teaspoons pine nuts, chopped
- 1 clove garlic, minced
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- Dash of ground allspice
- Vegetable cooking spray
- 1 (8-inch) pita bread round, cut in half crosswise
- 4 green leaf lettuce leaves
- 1/2 cup alfalfa sprouts
- 3 tablespoons fat-free cucumber dressing
- Pour water over bulgur in a small bowl; cover and let stand 15 minutes. Drain thoroughly. Combine bulgur, lamb, and next 7 ingredients in a medium bowl, stirring well. Shape mixture into 10 (1 1/2-inch) meatballs.
- Place meatballs on rack of a broiler pan coated with cooking spray. Broil 5 1/2 inches from heat (with electric oven door partially opened) 30 minutes or until done.
- Line each pita half with 2 lettuce leaves; place 1/4 cup sprouts and 5 meatballs in each. Top evenly with cucumber dressing.
