Mom'S Easy Lasagna
- 1/2 lb. ground beef
- 2 cans tomato sauce
- 1/2 c. water
- salt and pepper
- 1 (10 oz.) pkg. frozen spinach or broccoli
- 1 c. cream cheese
- 1/2 c. Parmesan grated cheese
- 2 eggs
- 1/8 tsp. nutmeg
- 1 pkg. lasagna
- 12 oz. Mozzarella or Monterey Jack cheese, sliced
- Brown meat; drain, then add tomato sauce, water and salt. Heat to a boil.
- Squeeze excess liquid from spinach.
- In blender or food processor, add spinach, cottage cheese, Parmesan cheese, eggs, salt, pepper and nutmeg.
- Blend until smooth.
- In 3-quart baking dish, layer sauce and uncooked lasagna.
- Spread with spinach filling.
- Continue layers of sauce, cheese, lasagna and sauce.
- Cover with foil.
- Bake at 375u0b0 for 1 hour.
- Serves 6 to 8.
