Cilantro-Pepper Biscuits
- 1 tablespoon cornmeal
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon cracked pepper
- 3 tablespoons minced fresh cilantro
- 2 tablespoons margarine
- 2 egg whites, lightly beaten
- 3/4 cup 1% low-fat cottage cheese
- 1 tablespoon all-purpose flour
- Vegetable cooking spray
- 2 teaspoons grated Parmesan cheese
- Sprinkle a baking sheet with 1 tablespoon cornmeal; set aside.
- Combine 1 3/4 cups flour and next 3 ingredients in a large bowl; cut in margarine with a pastry blender until mixture resembles coarse meal. Stir in egg whites and cottage cheese just until flour mixture is moistened.
- Sprinkle 1 tablespoon flour onto work surface. Turn dough out onto floured surface, and knead 4 or 5 times. Roll dough to 3/4-inch thickness; cut into rounds with a 2-inch biscuit cutter. Place rounds on prepared baking sheet. Coat tops of rounds lightly with cooking spray; sprinkle with Parmesan cheese. Bake at 450u0b0 for 14 minutes or until golden. Serve immediately.
