Mandarin Orange Sweet Potato Salad

  1. Preheat oven to 350u0b0.
  2. Boil potatoes in jackets and set aside. Combine sugar, cornstarch, salt and cinnamon in a saucepan.
  3. Add apricot nectar and orange rind.
  4. Bring to a boil, stirring constantly.
  5. Remove from heat.
  6. Stir in Butter Buds.
  7. Pour over sliced, peeled sweet potatoes and Mandarin oranges that have been placed in a casserole dish sprayed with a nonfat cooking spray. Sprinkle Grape-Nuts cereal on top.
  8. Bake for 25 minutes.
