Mandarin Orange Sweet Potato Salad
- 3 to 4 lb. sweet potatoes
- 1 c. packed brown sugar
- 1 1/2 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 1/2 tsp. ground cinnamon
- 1 c. apricot nectar
- 2 tsp. grated orange peel
- 2 Tbsp. liquid Butter Buds
- 8 oz. can Mandarin oranges, drained
- 1/2 c. Grape-Nuts cereal (a substitute for nuts)
- Preheat oven to 350u0b0.
- Boil potatoes in jackets and set aside. Combine sugar, cornstarch, salt and cinnamon in a saucepan.
- Add apricot nectar and orange rind.
- Bring to a boil, stirring constantly.
- Remove from heat.
- Stir in Butter Buds.
- Pour over sliced, peeled sweet potatoes and Mandarin oranges that have been placed in a casserole dish sprayed with a nonfat cooking spray. Sprinkle Grape-Nuts cereal on top.
- Bake for 25 minutes.
