Cherry Cobbler
- 1/4 c. soft butter
- 1/2 c. sugar
- 1 c. sifted flour
- 2 Tbsp. baking powder
- 1/4 tsp. salt
- 1 c. fruit juice
- 1/2 c. milk
- 1/2 c. sugar
- 1 (16 oz.) can cherries
- 1 c. cherry juice from can and add water if not enough juice from can
- red food coloring (if desired)
- Heat oven to 375u0b0.
- Cream butter and sugar until light and fluffy.
- Sift together flour, baking powder and salt.
- Add to creamed mixture alternately with milk.
- Beat until smooth.
- Pour into greased 10 x 5 x 3-inch loaf pan or greased 1 1/2-quart casserole.
- Spoon drained fruit over batter.
- Mix sugar and juice and pour over the top.
- Bake 45 to 50 minutes.
- Serve warm with Cool Whip or ice cream.
