Orange-Basil Orzo Pilaf
- 1 (32-ounce) carton fat-free, less-sodium chicken broth
- 12 ounces uncooked orzo
- 1 tablespoon butter
- 1 1/4 cups finely diced carrot (about 2 medium)
- 3/4 cup finely diced onion (about 1 small)
- 3/4 cup finely diced celery (about 2 stalks)
- 2 garlic cloves, minced
- 1/4 cup chopped fresh basil
- 2 teaspoons grated fresh orange rind
- 2 tablespoons fresh orange juice
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Place broth in a medium sauce-pan; bring broth to a boil. Add orzo; reduce heat, and simmer 9 minutes or until tender. Drain.
- While orzo cooks, melt butter in a large nonstick skillet over medium heat. Add carrot and next 3 ingredients; saute 5 to 7 minutes or until tender. Add cooked orzo, basil, and remaining ingredients; stir well to combine.
