Chicken Or Turkey Croquettes
- 3 1/2 c. coarsely chopped chicken or turkey
- 2 Tbsp. butter
- 3 finely minced onion
- 3 Tbsp. flour
- 1 1/2 c. chicken broth
- salt and freshly ground pepper to taste
- 1/4 tsp. nutmeg
- 3 drops Tabasco
- 3 egg yolks, beaten
- flour for dredging
- 1 egg, lightly beaten
- 3 Tbsp. water
- 1 1/2 c. fresh bread crumbs
- oil for frying
- mushroom sauce
- Melt the butter in saucepan and add onion, stirring until wilted.
- Sprinkle with flour and stir with a wire whisk as you add the chicken broth.
- Stir rapidly.
- Stir in chicken and add salt and pepper, nutmeg and Tabasco.
- Remove from heat, add yolks return to heat.
- Cook about 2 minutes, stirring constantly.
- Spoon in an 8 x 8 x 2-inch dish that has been buttered.
- Cover with buttered wax paper.
- Chill overnight.
