Couscous With Golden Raisins And Herbs
- 1 1/3 cups fat-free, less-sodium chicken broth, divided
- 1/4 cup finely chopped onion
- 1/4 cup golden raisins
- 1/4 teaspoon salt
- 3/4 cup uncooked couscous
- 2 tablespoons minced fresh parsley
- 2 tablespoons chopped fresh basil
- 1 tablespoon pine nuts, toasted
- 1 tablespoon fresh lime juice
- 2 teaspoons extra-virgin olive oil
- 1/8 teaspoon pepper
- Combine 1/3 cup chicken broth, onion, and raisins in a medium saucepan. Bring to a boil; reduce heat, and simmer, uncovered, 5 minutes or until liquid is absorbed. Add remaining chicken broth and salt; bring to a boil. Stir in couscous. Remove from heat; cover and let stand 5 minutes.
- Fluff couscous mixture with a fork. Add parsley and remaining ingredients to couscous mixture; toss gently. Serve immediately.
