Pasta And Bean Soup
- 1 lb. dry Great Northern beans
- 2 cloves garlic, minced
- 1 1/2 tsp. salt
- 1 whole carrot
- 1/2 c. cooked diced ham
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 2 qt. water
- 1 (1 lb.) can stewed tomatoes
- 1 bay leaf
- 1/2 tsp. oregano
- 1/4 tsp. pepper
- 1/4 c. water
- 1 c. ditalini (small macaroni)
- Soak beans 8 hours or overnight.
- Rinse and drain.
- Combine beans, water, salt and carrot.
- Simmer in a 6-quart pot 2 hours or until beans are tender. Combine onion, celery, garlic, tomatoes, bay leaf, oregano, salt, pepper and 1/4 cup water. Bring to a boil.
- Simmer 30 minutes.
- Cook macaroni according to directions and drain. Cube carrot and combine all ingredients.
- Heat before serving.
- Makes 3 1/2 quarts.
