Pasta And Bean Soup

  1. Soak beans 8 hours or overnight.
  2. Rinse and drain.
  3. Combine beans, water, salt and carrot.
  4. Simmer in a 6-quart pot 2 hours or until beans are tender. Combine onion, celery, garlic, tomatoes, bay leaf, oregano, salt, pepper and 1/4 cup water. Bring to a boil.
  5. Simmer 30 minutes.
  6. Cook macaroni according to directions and drain. Cube carrot and combine all ingredients.
  7. Heat before serving.
  8. Makes 3 1/2 quarts.
