Autumn Pork Chop Dinner
- 1 Tbsp. cooking oil
- 2 loin pork chops (1-inch thick)
- 2 c. shredded cabbage
- 1 Tbsp. chopped fresh parsley
- 2 Tbsp. brown sugar
- 2 medium potatoes, peeled and sliced 1-inch
- 1 c. fresh or frozen green beans
- 1 to 1 1/2 tsp. lemon pepper
- 3/4 c. apple juice
- 1/4 c. seasoned bread crumbs
- 1 Tbsp. melted butter
- In skillet heat oil and brown chops; set aside.
- Toss cabbage with parsley and brown sugar; place in baking dish.
- Top with potatoes and beans.
- Arrange chops on vegetables.
- Sprinkle with lemon pepper and apple juice.
- Cover and bake at 350u0b0 for 45 minutes.
- Combine crumbs and butter and sprinkle on top.
- Return to oven 5 minutes.
- Makes 2 servings.
