Ann'S Vanishing Oatmeal Cookies
- 1 c. butter (can use butter flavored Crisco or margarine), softened
- 1 c. brown sugar, firmly packed
- 1/2 c. white sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 c. all-purpose flour
- 1 tsp. cinnamon
- 1/2 tsp. salt (optional)
- 3 c. oatmeal (uncooked)
- 1 c. raisins (optional)
- 1 c. nuts, chopped (optional)
- 1 tsp. baking soda
- Heat oven to 350u0b0. Beat together butter and sugars until creamy. Add eggs and vanilla. Beat well. Add flour, baking soda, cinnamon and salt. Mix well. Stir in oatmeal, raisins and/or nuts. Mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown. Cool on cookie sheet for 1 minute, then move to a cooling rack. Makes about 4 dozen cookies.
