Old Fashioned Dark Fruit Cake
- 1 1/2 c. butter
- 2 1/4 c. sugar
- 6 eggs
- 4 1/2 c. self-rising flour
- 2 tsp. salt
- 2 tsp. cinnamon
- 1 1/2 tsp. cloves
- 2 tsp. allspice
- 1 1/2 c. orange juice
- 16 oz. candied cherries (red and green)
- 16 oz. candied pineapple
- 1 box white raisins
- 16 oz. fruit cake mix
- 1 pt. figs, drained or 8 oz. chopped dates
- 4 c. pecans
- Cream the butter, sugar and eggs. Sift together flour, salt, cinnamon, cloves and allspice. Mix together in a dish pan the cherries, pineapple, raisins, fruit cake mix, chopped dates and pecans. Add the creamed mixture alternately with flour mixture and 1 1/2 cups orange juice. Pour over fruit and mix well (by hand). Divide into 2 well-greased and floured tube pans. Bake at 250u0b0 for approximately 2 hours. After 1 hour of baking, cakes can be decorated on top.
