Turkey Cobb Sandwiches
- 1/2 cup (2 ounces) reduced-fat shredded Cheddar cheese
- 1/3 cup fat-free mayonnaise
- 1/4 cup (1 ounce) crumbled blue cheese
- 1/4 teaspoon freshly ground black pepper
- 1 green onion, thinly sliced
- 4 leaves green leaf lettuce
- 8 (0.66-ounce) slices light white bread, lightly toasted
- 1 2 large watercress sprigs, trimmed
- 1/4 pound thinly sliced smoked deli turkey
- 4 slices 40%-less-fat bacon (such as Gwaltney's), cooked and halved
- 8 thin slices tomato
- Combine first 5 ingredients in a small bowl, stirring well.
- Place lettuce leaves on 4 slices bread; top evenly with watercress. Layer turkey, bacon, and tomato evenly on watercress. Spread mayonnaise mixture evenly on remaining slices of bread; top sandwiches with bread.
- Slice sandwiches in half diagonally, using a wooden pick to hold each half together.
