Green Bean Plaki(Armenian Bean-Vegetable Dish)

  1. In a large saucepan, bring water and 1/2 teaspoon salt to a boil.
  2. Add green beans; bring to a boil.
  3. Cover and cook over moderate heat for 5 minutes, stirring occasionally.
  4. Drain and set aside.
  5. In same saucepan, saute onion and garlic in oil until tender (5 to 7 minutes).
  6. Stir in green beans, tomatoes, parsley, pepper and remaining 1/4 teaspoon salt.
  7. Bring to a boil.
  8. Cover and simmer about 15 minutes or until beans are crisp-tender, stirring occasionally.
  9. Serve hot, cold or at room temperature. Garnish with additional parsley (and lemon slices if desired). Makes 3 cups (approximately 4 servings).
