Aunt Mary'S Banana-Chocolate Chip Bread
- 1 c. sugar
- 2 eggs
- 2 bananas, mashed (about 3/4 c.)
- 2 c. all-purpose flour
- 1/2 tsp. salt
- 1/2 c. shortening
- 2 tsp. vanilla extract
- 1 tsp. baking soda
- 1 c. (6 oz.) semi-sweet chocolate chips
- In a mixing bowl, cream sugar and shortening.
- Beat in eggs, vanilla and bananas until thoroughly blended.
- Combine flour, soda and salt.
- Add to creamed mixture and stir just until combined. Fold in chocolate chips.
- Spoon into a greased 9 x 5 x 3-inch loaf pan.
- Bake at 350u0b0 for 60 to 70 minutes or until bread tests done with a wooden pick.
- Cool in pan for 10 minutes before removing to a wire rack to cool completely.
- May freeze slices in bags or wrapped in foil.
- Yield:
- 1 loaf.
