Maple Bars
- 1 c. plus 1 Tbsp. unsalted butter, softened and divided
- 1 c. sugar
- 2 tsp. vanilla
- 1 c. maple syrup
- 2 eggs
- 1 1/3 c. flour
- 1 tsp. baking powder
- 1 c. flaked coconut
- 2 c. rolled oats (non-instant)
- 1 c. walnuts, finely chopped
- Preheat oven to 350u0b0.
- Grease a 9 x 13-inch baking pan with 1 tablespoon butter.
- In a large mixing bowl, beat together butter and sugar.
- Add vanilla, maple syrup and eggs.
- In a medium bowl, sift together flour and baking powder; add to maple mixture. Blend in oats, coconut and walnuts.
- Spread the batter evenly in pan and bake for about 30 minutes, until lightly browned and wooden pick comes out clean.
- Cool on a rack, then cut into bars. Makes 2 dozen bars.
