Lemon Zucchini Bread(Diabetic)
- 1/3 c. unsweetened applesauce
- 2/3 c. apple juice concentrate
- 1/3 c. fructose
- 1/3 c. oil
- 2 eggs
- 1 Tbsp. lemon juice
- 1 tsp. lemon peel
- 2 c. flour
- 2 Tbsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1 c. grated zucchini
- 1/2 c. chopped pecans
- Preheat oven to 350u0b0.
- With electric mixer, combine applesauce, apple juice concentrate, fructose, oil, eggs and lemon juice.
- Beat until well blended.
- In a separate bowl, combine lemon peel, flour, baking powder, salt, baking soda, nutmeg and cinnamon.
- Add zucchini and nuts to dry mixture.
- Add batter to dry mixture and blend well.
- Pour into 9 x 5 x 3-inch pan which has been coated with vegetable cooking spray.
- Bake for one hour or until inserted knife comes out clean.
- Yields 16 slices.
- Each slice contains 171 calories (41% from fat).
