Applesauce Snack Cake With Cream Cheese Frosting
- 3 tablespoons vegetable oil
- 1/3 cup granulated sugar
- 1/3 cup firmly packed light brown sugar
- 1 large egg
- 1 large egg white
- 1 teaspoon vanilla extract
- 1/2 cup chunky applesauce
- 1 cup all-purpose flour
- 3/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- Dash of ground cloves
- 1/4 teaspoon salt
- Cooking spray
- 1 tablespoon finely chopped walnuts
- Preheat oven to 350u0b0.
- Combine oil and sugars in a large bowl; beat with a mixer at medium speed until well blended. Add egg and egg white; beat well. Beat in vanilla and applesauce. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and next 7 ingredients, stirring well with a whisk. Add flour mixture to applesauce mixture.
- Pour batter into an 8-inch square baking pan coated with cooking spray. Bake at 350u0b0 for 22 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes.
- Spread top of cake with Cream Cheese Frosting, and sprinkle with walnuts. Cut into 9 equal squares.
