Zucchini Bread
- 1 c. granulated sugar
- 2 eggs
- 1/2 c. vegetable oil
- 1 tsp. vanilla
- 1 1/2 tsp. grated orange rind
- 1 1/2 c. all-purpose flour or 1/2 whole wheat
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 tsp. each: salt, baking powder and baking soda
- 1/2 c. raisins
- 1/2 c. chopped nuts
- 1 c. grated fresh or frozen and thawed zucchini (strain if using frozen)
- In large bowl, beat together sugar, oil and eggs.
- Mix in orange rind and vanilla.
- Stir together in another bowl flour(s), cinnamon, salt, baking powder, baking soda and nutmeg.
- Mix in raisins and nuts.
- Stir into batter alternately zucchini, making 3 additions of dry ingredients and 2 of zucchini.
- Transfer to greased 8 x 4-inch loaf pan.
- Bake in 350u0b0 oven for 45 to 60 minutes.
- Let cool 10 minutes in pan.
- Turn out to cool on wire rack.
- Wrap in foil or Saran.
- Better the next day.
