Haddock Loaf
- 2 pounds skinned haddock fillets
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon ground mace
- 1/2 cup whipping cream
- 1/4 cup butter or margarine, melted
- Paprika
- Fresh parsley sprigs
- Lemon slices
- flour, salt, mace, whipping cream, and butter in a medium mixing bowl. Mix well. Spoon mixture into a greased 9- x 5- x 3-inch loaf pan; press mixture evenly into pan.
- Place loaf pan in a 13- x 9- x 2- inch baking dish; add hot water to dish to a depth of 1 inch. Cover loaf pan with greased unglazed brown paper. (Do not use recycled paper.) Bake at 350u0b0 for 40 minutes or until set. Remove from oven; turn fish loaf out onto a serving dish. Sprinkle with paprika. Garnish with parsley and lemon slices. Slice and serve immediately.
