Sweet And Sour Fish Fillets(Microwave)
- 1 lb. fish fillets (fresh or defrosted)
- 3 Tbsp. brown sugar
- 1 Tbsp. cornstarch
- 1 tsp. chives
- 1/4 tsp. dry mustard
- 1 (8 oz.) can pineapple chunks, drained and juice reserved
- 2 Tbsp. vinegar
- 1 Tbsp. soy sauce
- 1 (1 1/4 oz.) pkg. cashews
- Arrange fillets in a 12 x 8-inch baking dish.
- Cover with vented plastic wrap; microwave at High 6 to 7 minutes, or until fish flakes easily, rotating dish 1/2 turn after half the cooking time.
- Set aside.
- In a 1-quart casserole, combine brown sugar, cornstarch, chives and dry mustard.
- Stir in pineapple juice, vinegar and soy sauce.
- Microwave at High 1 1/2 to 2 minutes, or until thickened, stirring once or twice during cooking.
- Stir in pineapple chunks and cashews.
- Drain fish well.
- Spoon sauce over. Microwave, uncovered, at High 1 to 2 minutes, or until thoroughly heated.
- Serves 4.
