Ensalada De Legumbres
- 1/4 lb. sweet or hot Italian sausage
- 1 1/2 c. cooked green beans
- 1/4 c. snipped parsley
- 4 c. torn lettuce
- 1 Tbsp. vinegar
- 1/8 tsp. pepper
- 10 oz. canned or frozen corn, cooked
- 3 medium tomatoes, sliced
- 1/4 c. snipped scallions
- 2 Tbsp. olive oil
- 1/2 tsp. salt
- 1/2 small clove garlic, minced
- Saute sausage in a skillet until light brown. Drain on a paper towel.
- Cool.
- Crumble.
- Place in a large bowl with corn, green beans, sliced tomatoes, parsley, scallions and lettuce. Refrigerate until serving time.
- In a small bowl, beat together olive oil, vinegar, salt, pepper and garlic.
- Just before serving, pour over salad and toss well.
- Yields 6 to 8 servings.
