Ensalada De Legumbres

  1. Saute sausage in a skillet until light brown. Drain on a paper towel.
  2. Cool.
  3. Crumble.
  4. Place in a large bowl with corn, green beans, sliced tomatoes, parsley, scallions and lettuce. Refrigerate until serving time.
  5. In a small bowl, beat together olive oil, vinegar, salt, pepper and garlic.
  6. Just before serving, pour over salad and toss well.
  7. Yields 6 to 8 servings.
