Meringue-Nut Pie
- 3/4 c. chopped walnuts
- 1 1/4 c. crushed saltine crackers
- 2 tsp. baking powder
- 4 egg whites
- 1/4 tsp. cream of tartar
- 1/2 c. sugar
- 1 tsp. vanilla extract
- cooking spray
- 2 1/4 c. fat-free milk, divided
- 1 (1.4 oz.) pkg. chocolate sugar-free instant pudding mix
- 1 (1.3 oz.) envelope whipped topping mix
- 1/2 tsp. vanilla extract
- 2 Tbsp. chopped walnuts
- Combine first 3 ingredients; stir well. Beat egg whites and cream of tartar at high speed of an electric mixer until foamy. Add sugar; beat until stiff peaks form and sugar dissolves.
- Add vanilla; fold in cracker mixture. Spread in a 9-inch pie plate. Bake at 250u0b0 for 40 minutes; cool.
