Coconut Blondies(Low Calorie - 90 Calories Each)
- 1/3 c. reduced calorie oleo
- 1/2 c. morsels of wheat bran cereal
- 1/2 c. firmly packed brown sugar
- 1 tsp. vanilla extract
- 1 egg
- 3/4 c. flour
- 1/2 tsp. baking powder
- 1/8 tsp. baking soda
- 1/3 c. shredded unsweetened coconut
- Melt oleo in medium saucepan over medium heat.
- Add cereal. Cook 2 minutes, stir constantly.
- Remove from heat; add brown sugar, vanilla and egg, stirring well.
- Set aside cereal mixture. Combine flour and next 3 ingredients; add to cereal, stirring well. Spread into 8-inch square pan, coated with vegetable cooking spray. Bake at 350u0b0 for 15 minutes.
- Let cool and cut into 2-inch square bars.
- Store in covered container in fridge.
- Yields 16 bars.
