Chocolate-And-Peanut Butter Banana Pudding
- 1/3 cup (about 1 1/2 oz.) all-purpose flour
- 1/4 teaspoon table salt
- 3/4 cup plus 6 Tbsp. granulated sugar, divided
- 3 cups whole milk
- 3 large eggs
- 2/3 cup creamy peanut butter
- 1 tablespoon unsalted butter
- 2 1/2 teaspoons vanilla extract, divided
- 6 medium-size ripe bananas, divided
- 1 1/2 (9-oz.) pkg. chocolate wafer cookies (such as Nabisco Famous), divided
- 3 cups heavy cream
- 1/4 cup finely chopped roasted, salted peanuts
- 1 tablespoon unsweetened cocoa
- Beat cream and remaining 1 teaspoon vanilla in bowl of a heavy-duty stand mixer with whisk attachment on high speed until foamy; gradually add remaining 6 tablespoons sugar, 1 tablespoon at a time, and beat at medium-high speed until stiff peaks form. (Do not overbeat.)
