  2. Combine oil, vinegar, oregano, and salt in a medium bowl. Stir in edamame and cucumber. Sprinkle with olives and feta cheese.
  3. Sesame-Carrot Edamame Salad: Boil 1 1/2 cups frozen shelled edamame 3 minutes or until tender. Drain. Combine 2 tablespoons chopped fresh cilantro, 1 1/2 tablespoons rice vinegar, 1 1/2 tablespoons dark sesame oil, 1/2 teaspoon sesame seeds, and 1/4 teaspoon kosher salt in a medium bowl, stirring with a whisk.
