Grilled Citrus Cocktail

  1. Cut grapefruit in half and, using a grapefruit knife, remove pulp and cut in sections.
  2. Reserve 4 grapefruit shells.
  3. Cut away top and bottom from oranges and lime, then remove all skin and pith.
  4. Cut in sections, reserving any juices.
  5. In a large bowl, mix grapefruit, orange and lime sections.
  6. Arrange fruit in grapefruit shells and sprinkle 1 teaspoon of sherry over each.
  7. Sprinkle with brown sugar and top with 1 teaspoon butter.
  8. Broil until brown sugar melts.
  9. Top with reserved fruit juices and serve immediately garnished with sprigs of lemon balm.
  10. Makes 4 servings.
