Grilled Citrus Cocktail
- 2 pink grapefruit
- 3 oranges
- 1 Tbsp. plus 1 tsp. sweet sherry
- 2 Tbsp. plus 2 tsp. light brown sugar
- 1 Tbsp. plus 1 tsp. butter
- 1 white grapefruit
- 1 lime
- Cut grapefruit in half and, using a grapefruit knife, remove pulp and cut in sections.
- Reserve 4 grapefruit shells.
- Cut away top and bottom from oranges and lime, then remove all skin and pith.
- Cut in sections, reserving any juices.
- In a large bowl, mix grapefruit, orange and lime sections.
- Arrange fruit in grapefruit shells and sprinkle 1 teaspoon of sherry over each.
- Sprinkle with brown sugar and top with 1 teaspoon butter.
- Broil until brown sugar melts.
- Top with reserved fruit juices and serve immediately garnished with sprigs of lemon balm.
- Makes 4 servings.
