Pb And J Cheesecake Bars
- 15 reduced-fat vanilla wafers, crushed
- 2 tablespoons butter, melted
- 1 teaspoon sugar
- Cooking spray
- 1 (8-ounce) block 1/3-less-fat cream cheese
- 1/4 cup creamy peanut butter
- 1/3 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup seedless blackberry fruit spread
- 1 reduced-fat vanilla wafer, crushed
- Preheat oven to 350u0b0.
- Combine first 3 ingredients; press into bottom of an 8-inch square baking pan coated with cooking spray. Bake at 350u0b0 for 6 minutes.
- Beat cream cheese and peanut butter with a mixer at medium speed until creamy. Add sugar and egg, beating well. Stir in vanilla.
- Spread blackberry spread evenly over crust. Pour cream cheese mixture over fruit spread; sprinkle with remaining crushed vanilla wafer. Bake at 350u0b0 for 14 minutes or until almost set. Cool 30 minutes. Cover and chill 1 1/2 hours.
