Cinnamon-Raisin French Toast
- Topping:
- 4 cups chopped peeled Gala apple (about 2 pounds)
- 1 1/2 teaspoons cornstarch
- 1 1/2 cups water
- 1/4 cup packed brown sugar
- 3 tablespoons Calvados (apple brandy)
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup maple syrup
- French Toast:
- 1 cup 1% low-fat milk
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 3 large eggs
- 1 tablespoon butter
- Preheat oven to 250u0b0.
- To prepare topping, combine apple and cornstarch in a medium bowl, tossing to combine.
- Place 1 1/2 cups water and next 6 ingredients (through salt) in a medium saucepan over medium heat. Bring to a simmer; cook 5 minutes. Add apple; cook 10 minutes or until apple begins to soften and release juices. Stir in maple syrup; remove from heat.
- To prepare French toast, combine milk and next 4 ingredients (through eggs) in a medium bowl, stirring with a whisk.
- Melt 1 teaspoon butter on a nonstick griddle or large nonstick skillet over medium-high heat. Dip 4 bread slices into milk mixture, turning to coat both sides and allowing excess milk mixture to drip off. Place bread on pan, and cook 2 to 3 minutes or until bottom of bread is lightly browned. Turn bread over, and cook 2 minutes until lightly browned. Place French toast on a baking sheet; place in oven to keep warm. Repeat procedure with remaining butter and bread slices. Serve apple mixture over French toast.
