Barbecued Baby Back Ribs
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 celery stalk, chopped
- 1 clove garlic, minced
- 1 cup catsup
- 1/4 cup brown sugar, packed
- 1/4 cup red wine vinegar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 1/2 pounds baby back ribs
- Heat oil in a saucepan, then add onion, celery and garlic. Saute about 5 minutes, until tender. Add all remaining sauce ingredients, stirring and simmering for about 10 minutes. Put sauce in food processor and whirl until smooth. Allow sauce to cool slightly. Bring a pot of water to a boil; simmer ribs, covered, for about 20 minutes. Drain ribs and dry withpaper towels; baste generously with sauce. Grill for 5 to 6 minutes on one side. Turn ribs and baste again. Grill for 6 minutes longer and serve with extra sauce.
