First Place Chili

  1. Heat the oil in a heavy pot over medium heat.
  2. Add the onions, bell pepper, celery and garlic.
  3. Cook, stirring until the onions are translucent.
  4. Add the meat to the pot a little at a time, stirring occasionally, until the meat is evenly browned.
  5. Stir the remaining ingredients.
  6. Bring to a boil, then lower heat and simmer, uncovered, for 2 1/2 to 3 hours.
  7. Stir often.
  8. Taste and adjust seasonings.
