First Place Chili
- 1 Tbsp. oil
- 1/2 green bell pepper, finely chopped
- 1 medium clove garlic, finely chopped
- 20 oz. tomato sauce
- 3 oz. tomato paste
- 2 Tbsp. salsa
- 1 medium onion, finely chopped
- 1 stalk celery, finely chopped
- 2 lb. ground meat (beef, turkey, vegieburger)
- 2 c. water
- 1 fresh jalapeno
- 2 Tbsp. ground hot red pepper
- 1 Tbsp. ground mild red pepper
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- 1 1/2 tsp. salt
- freshly ground pepper to taste
- Heat the oil in a heavy pot over medium heat.
- Add the onions, bell pepper, celery and garlic.
- Cook, stirring until the onions are translucent.
- Add the meat to the pot a little at a time, stirring occasionally, until the meat is evenly browned.
- Stir the remaining ingredients.
- Bring to a boil, then lower heat and simmer, uncovered, for 2 1/2 to 3 hours.
- Stir often.
- Taste and adjust seasonings.
