Salmon Nuggets
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/2 c. milk
- 2 egg yolks
- 1 c. fresh bread crumbs
- flour
- fine bread crumbs
- 1 medium onion, chopped
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 (16 oz.) can salmon
- 1 egg + 2 Tbsp. water, beat
- hot deep fat for frying
- In a saucepan, melt butter and in it, saute onion for 5 minutes.
- Stir in flour, gradually stir in milk and cook over low heat until thickened, stirring constantly.
- Remove from heat and beat in salt, pepper and egg yolks.
- Stir in salmon and fresh bread crumbs.
- Chill.
- Shape mixture into 2-inch nuggets, roll in flour and dip in egg mixture and coat with dry bread crumbs.
- Fry in hot deep fat (375u0b0) for 4 to 5 minutes or until golden brown. Drain on paper towel.
- Serve piping hot with favorite cream sauce. Serves 4.
