Mint-Crusted Lamb

  1. Sprinkle lamb with salt and pepper. Cook lamb in a large nonstick skillet over medium-high heat 3 to 4 minutes on each side or until browned.
  2. Process bread and next 5 ingredients in a food processor until coarsely ground. Brush mustard over lamb; press breadcrumb mixture over mustard. Place lamb on a lightly greased rack in a broiler pan.
  3. Bake at 400u0b0 for 40 to 45 minutes or until a meat thermometer inserted into thickest portion registers 145u0b0.
  4. Remove from oven, and let stand 5 minutes or until thermometer registers 150u0b0 (medium-rare).
